Nice Cream

Nice cream is a wonderful alternative to dairy-milk ice cream. The secret to low fat dairy-free ice cream is bananas!!! They are so incredibly creamy. When frozen and then blended in a super powerful food processor or blender.

The combinations are endless.. you can choose to add whatever flavouring you want. Of course you can always have it plain. Coconut and bananas (or just bananas) taste divine.

Flavouring options: raspberry, blueberry, vanilla, lemon/lime/orange (citric acid + pure organic essential oil + zest), date, fig, carob. Whatever you fancy really!

  • 6 large bananas
  • 2 cubes frozen coconut milk
  • Optional: 100 g frozen berries, 1-2 tablespoons of carob, 1 drop organic lemon/lime/orange essential oil + 1/8 tsp citric acid + 1 tsp lemon/lime/orange zest, 3 fresh dates, 3 soaked dried figs, 1 tsp vanilla powder
  1. Step 1

    Peel the bananas and freeze overnight.

  2. Step 2

    Chop the bananas 1 cm thick.

  3. Step 3

    Place chopped banana and frozen coconut cubes into the Thermomix bowl. Optional step: add your choice of flavouring (berries, carob etc.).

  4. Step 4

    Blend on speed 10 for 5 seconds. While still blending remove MC and stir with the spatula in an anti-clockwise direction.

  5. Step 5

    Blend for a total of 30 - 45 seconds depending on your desired consistency.

  6. Step 6

    Serve in bowls topped with fresh fruit! Enjoy x
