Raw Coconut Muesli

A simple, yet deliciously nutritious recipe! Absolutely ideal for other fellow tropical dwellers, where coconut palms are a-plenty!

For those of you like me, who cannot tolerate large chunks of coconut (they seem to come out the other end!). Pop the coconut meat into a food processor with the almonds, grind until fine, resembling desiccated coconut. Follow recipe as usual.

If you are following a strict low-histamine diet, and cannot tolerate fresh dates; substitute dates for raw honey or soaked dried figs or cooked apple.

Ingredients
  • 60 g fresh mature coconut meat
  • 2 x fresh dates
  • 20 g raw almonds
  • 1 x green apple, halved
  • Sprinkle of buckinis, fresh fruit and coconut yoghurt to serve

Instructions
  1. Step 1

    Place almonds in a food processor, pulse a couple of times.

  2. Step 2

    Add remaining ingredients and blend briefly until mix is still a bit
    chunky (according to your preference)

  3. Step 3

    Serve with buckinis (soaked dehydrated buckwheat ~ an awesome crunchy addition to your muesli) coconut yoghurt and fresh fruit.

  4. Step 4

    Optional step ~ add coconut meat to almonds and grind finely if you have a sensitive stomach and don't digest raw food very well.
