My husband is constantly challenging my skills! It's hard to create healthy foods that he adores. This low-fat brownie recipe hits the spot! Hope you enjoy :)
- 1 1/2 cups of wholemeal spelt flour
- 1 cup coconut sugar
- 1/2 cup cacao
- 2 1/2 tsp baking powder
- 1/4 tsp sea salt
- 2 Tbsp rice malt syrup
- 3 tsp organic vanilla extract
- 2 vegan eggs (4 Tbsp chia seed meal + 3/4 cup water)
- 2 Tbsp water
- 1/2 - 3/4 cup 85% chocolate, chopped into little pieces
Place sugar in Thermomix bowl and mill 2 seconds/speed 9. Set aside.
To make vegan eggs. Place chia meal in bowl. With blades spinning on speed 3, slowly add the water. Mix 5 mins/speed 2. The mixture should be thick and smooth.
While creating vegan eggs sift flour and cocoa into a bowl. Then add all other dry ingredients. If your sieve/sifter fits inside your Thermomix bowl skip this step and sift straight into the bowl.
Once the eggs are done. Add all dry ingredients, followed by all other wet ingredients. Mix 10 seconds/speed 6.
Add chocolate pieces. Mix /10 seconds/speed 3.
Preheat oven to 175 degrees.
Lightly grease a cake tin using raw organic coconut oil (I used a 21 cm square non-stick non-toxic tin!). Pour brownie mix into tin.
Bake in oven for 25 - 35 mins. The top should be firm to touch. Double check with a skewer. Insert into the middle - it should come out clean.
Once done let brownie cool for 5-10 mins. Remove from tin. Cool completely on a rack or chopping board. Chop into squares or whatever you prefer. Enjoy! Warm straight from the oven is the ultimate according to my husband! :)
